Strawberry Spinach Pasta Salad with Orange Poppyseed Dressing

“This is one of my favorite pairings! The salad is sweet, tangy, and savory all in one bite. A perfect salad to serve with our 2017 Dry Rosè of Sangiovese. The flavors really compliment each other. Try adding leftover shredded chicken for more of a main course. Enjoy!”

– Serves 4 –

Ingredients for Salad:
8 oz. penne pasta, cooked
2 cups fresh baby spinach
1 cup strawberries, sliced
1 cup pineapple chunks
½ cup dried cranberries
or blueberries
½ cup whole salted cashews

Ingredients for Dressing:
½ cup extra virgin olive oil
¹⁄³ cup apple cider vinegar
¼ cup plain greek yogurt
1 Tbsp. Dijon Mustard
3 Tbsp. honey
¹⁄³ cup orange juice
1 tsp. poppy seeds
salt and pepper to taste

Method of Preparation:
Combine all dressing ingredients in a jar, shake well and set aside.

Combine all salad ingredients in a large bowl.

Toss with dressing and serve immediately.

Serve with our Dry Rose’ of Sangiovese.
