Linda’s Favorite Spaghetti Sauce

“Sin Zin has been on our table for decades and this is one of our favorite recipes.  We often entertain winery visitors, along with family, and I can adjust this recipe as needed with pantry ingredients to easily serve any size crowd.”

– Serves 14 –

Ingredients:

1 lb ground beef
1 lb ground mild Italian sausage
1-2 yellow onions
4-5 garlic cloves
1-2 carrots
1 green bell pepper
1/4 cup AVV olive oil
1 29 oz can crushed tomatoes
2 29 oz cans tomato sauce
1 12 oz can of tomato paste
1 cup Sin Zin
1/2 – 3/4 cup parsley chopped
Fresh or dried Italian herbs ( basil, thyme, oregano, rosemary), finely chopped, to taste
Salt & Pepper to taste
 

Method of Preparation:

In a large pot, brown the ground beef and ground sausage, then drain the liquid and remove the meat.

In a Cuisinart, finely chop the onions, garlic, carrot and green bell pepper.  Heat the olive oil in the same pot used to brown the meat and saute the vegetables.

Add the browned meat back to the pot, then add the crushed tomato, tomato sauce and paste, wine, parsley, Italian herbs, salt and pepper.

Cover and simmer 2-3 hours, tasting occasionally and adjusting the seasoning, until the liquid starts to separate from the sauce.

*In summer, I use fresh tomatoes instead.  This usually requires the addition of some sugar to neutralize the acid; it may also require more tomato paste if it has too much liquid.
