Pan Fried Herbed Potatoes with Blue Cheese

Serves 4

Ingredients:
¼ cup olive oil
¼ cup canola oil
1 lb fingerling potatoes – quartered lengthwise
2 sprigs rosemary
2 sprigs thyme
¼ cup parsley, chopped
1 cup blue cheese, crumbled
Kosher salt, to taste

Method of Preparation:
Put both oils in a large sauce pan over medium heat. Once the oil is hot, add the potatoes. Keep heat at medium and gently fry potatoes for about 20 minutes, stirring and turning frequently, until soft.

Add rosemary and thyme directly to the pan for the last minute of frying and stir. With a slotted spoon, remove to a sheet pan lined with paper towels to soak up any extra oil.

Sprinkle parsley, blue cheese and salt over the potatoes, then transfer to serving dish.

Enjoy with a glass of the 2020 Sin Zin and your choice of chicken, beef or pork.
