Sicilian Pesto

Makes: 2 cups


1/2 cup slivered almonds, toasted
1 clove garlic, peeled
1 cup basil leaves, packed tightly
2 cups cherry tomatoes, halved
1 tsp kosher salt
1/2 tsp red pepper flakes
1/2 cup AVV olive oil
1/2 cup Parmesan, Romano or
Asiago cheese, grated

Method of Preparation:

Place almonds and garlic in a blender and pulse until finely chopped.

Add basil, tomatoes, salt and red pepper flakes, then pulse again to combine.

With the blender running, add the olive oil in a slow, steady stream until combined.

Scrape into a bowl and stir in grated cheese.
