Soy Marinated Rack of Lamb

– Serves 2 –

Ingredients:
1 cup soy sauce
4 cups cold water
1 Tbsp. garlic, minced
1 onion, chopped finely
4 bay leaves
8 juniper berries, crushed
2 baby rack of lamb, frenched and silver skin removed
1 Tbsp. canola oil

Method of Preparation:
Combine first 6 ingredients in a bowl and set aside. In a non reactive pan, place racks of lamb and pour marinade over lamb and cover. Marinate overnight.  Preheat oven to 450 degrees.  Remove lamb from marinade and pat dry. Heat a large oven proof sauté pan to high and add oil. Add lamb and sear on all sides. Place in oven for 12 minutes, turning over once at 7 minutes. When done, remove from oven and let rest for 10 minutes.
