Cherry Pineapple Bliss EasterHolidaysRoséDessert “A creamy, sweet and slightly floral dessert salad that comes together in minutes and isn’t too filling. The rich summer fruit flavors of both the wine and the salad complement one another. The lavender calms the slight acidity in the Rosé, while also reducing the perfume notes of the lavender and bringing out the slight nuttiness of the walnuts.” Kristy Ramirez, Director of Hospitality Serves: 8-12 Ingredients: Serves: 8-12 1 can (20 oz) crushed pineapple, drained 1 container (8 oz) Cool Whip, slightly thawed if frozen 1 can (14 oz) sweetened condensed milk 1 can (21 oz) cherry pie filling ⅔ cup walnuts, chopped Dried lavender, such as Morton & Bassett brand, for garnish Method of Preparation: Drain pineapple thoroughly, pressing off as much liquid as possible. You can either discard the juice or save it for another use. In a large bowl, combine drained pineapple, Cool Whip, condensed milk, cherry pie filling and chopped walnuts. Gently fold the ingredients together until everything is evenly incorporated. Cover and refrigerate for at least 1 hour to allow the flavors to blend and the texture to firm up a bit. When ready to serve, spoon into serving bowls and finish with a small pinch of dried lavender. The flavor is potent so be sure to start with just a touch and adjust to taste if you prefer more.
