Roasted Carrots with Whipped Feta

Serves: 4-6

Ingredients:
1.5 bs baby carrots, peeled
3 Tbsp AVV olive oil, divided
Salt and pepper, to taste
1 tsp fresh thyme, plus additional for garnish
4 oz feta cheese
2 oz plain Greek yogurt
1-3 Tbsp water, divided (to loosen and drizzle)
1-2 tsp honey
1/8 tsp chili flakes (optional)

Method of Preparation:
Heat oven to 425°F. In a medium bowl, toss carrots with 2 Tbsp olive oil, salt, pepper and thyme. Roast for 20-25 minutes, turning halfway through, until tender and caramelized at the edges.

In a blender or food processor, blend feta, Greek yogurt, 1 Tbsp olive oil and 1 Tbsp water until smooth and creamy. Add additional water a splash at a time, until desired consistency is reached. Reserve 2 Tbsp of the whipped feta, for drizzling.

On a serving platter, spread the whipped feta and top with roasted carrots. Add a splash more water to the reserved feta and drizzle over top of the carrots, then drizzle lightly with honey. Finish with a sprinkling of fresh thyme and optional chili flakes.
