Savory Pinwheels

“These savory pinwheels are a wonderful choice for a spring evening on the back porch. Paired with a refreshing AVV Rosé, they make a light and flavorful starter for almost any occasion.

Serves: 6

Ingredients:
1 sheet frozen puff pastry, thawed
5 slices thick-cut bacon, cooked
6 Tbsp salted butter, softened & divided
4 oz shredded smoked Gruyère cheese
1 handful fresh arugula
1 medium Roma tomato, diced

Method of Preparation:

Remove the puff pastry from the freezer and let it thaw at room temperature for about 1 hour, or until pliable.

Roll the pastry out to about one and a half times its original size.

Spread 5 Tbsp of the softened butter evenly over the pastry, making sure to cover the entire surface.

Sprinkle the shredded smoked Gruyère evenly over the buttered pastry.

Lay the cooked bacon lengthwise across the pastry.

Scatter the arugula and diced tomato evenly over the surface.

Roll the pastry up lengthwise as tightly as possible without tearing it.

Refrigerate the roll for 2 to 3 hours, or for up to a few days if making ahead.

Slice the roll into 3/4-inch pieces and place them on a sheet pan lined with parchment paper, if desired.

Bake at 375° for about 25 minutes, brushing the tops with the remaining butter before and during baking.
